In a blender, combine 2 ripe bananas, 1 cup rolled oats, 2 eggs, 1 teaspoon vanilla extract, 1 teaspoon baking powder, and 1/2 teaspoon cinnamon until smooth
Let the batter rest for 2-3 minutes to allow the oats to soften slightly
Heat a non-stick griddle or frying pan over medium heat and lightly butter or oil the surface
Pour 1/4 cup portions of batter onto the hot griddle, spacing them apart
Cook for 2-3 minutes until the edges look set and bubbles form on top
Flip the pancakes carefully and cook for another 1-2 minutes until golden brown
Transfer cooked pancakes to a warm plate and repeat with remaining batter
Serve warm with toppings such as fresh berries, Greek yogurt, honey, or almond butter
