Cut beef sirloin into thin strips against the grain and set aside
Chop broccoli into bite-sized florets and mince garlic and ginger
In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, and a splash of water to create the sauce
Heat vegetable oil in a wok or large skillet over high heat until shimmering
Add beef strips and stir-fry for 2-3 minutes until browned, then remove and set aside
Add remaining oil to the wok, then add garlic and ginger, stir-fry for 30 seconds until fragrant
Add broccoli florets and stir-fry for 4-5 minutes until tender-crisp, adding a splash of water if needed
Return beef to the wok, pour in the sauce, and toss everything together for 1-2 minutes until sauce thickens and coats all ingredients
