In a large bowl, combine warm milk, active dry yeast, and a pinch of sugar. Let sit for 5 minutes until foamy.
Add eggs, salt, and remaining sugar to the yeast mixture and whisk together until well combined.
Gradually add flour to the wet ingredients, mixing until a shaggy dough forms.
Knead the dough for 8-10 minutes until smooth and elastic, then gradually incorporate softened butter in small pieces, ensuring each addition is fully incorporated before adding more.
Continue kneading until the dough is silky, smooth, and springs back when poked. This should take approximately 10-12 minutes total.
Place dough in a greased bowl, cover with a damp cloth, and let rise at room temperature for 2 hours until doubled in size.
Divide dough into brioche molds or a loaf pan, cover, and let rise for 1-1.5 hours until puffy.
Brush with egg wash and bake at 375°F (190°C) for 25-30 minutes until golden brown and the internal temperature reaches 190°F (88°C).
