Preheat oven to 190°C (375°F)
Butterfly each chicken breast by slicing horizontally halfway through, being careful not to cut all the way through
Season the inside and outside of chicken breasts with salt and pepper
Layer fresh mozzarella slices, tomato slices, and fresh basil leaves inside each butterflied chicken breast
Heat olive oil in a large oven-safe skillet over medium-high heat
Sear the stuffed chicken breasts for 4-5 minutes per side until golden brown
Transfer skillet to preheated oven and bake for 12-15 minutes until internal temperature reaches 74°C (165°F)
Rest for 3 minutes before serving, drizzle with balsamic glaze and garnish with fresh basil
