Preheat oven to 190°C and lightly brush a 9x13 inch baking dish with olive oil
In a large bowl, combine crumbled feta cheese, ricotta cheese, eggs, fresh dill, and black pepper, mixing until well combined
Layer 4 sheets of phyllo pastry in the prepared baking dish, brushing each sheet lightly with olive oil
Spread the cheese mixture evenly over the phyllo layers
Layer remaining 4 sheets of phyllo pastry on top, brushing each with olive oil
Using a sharp knife, cut the pie into 8 rectangular portions, cutting all the way through to the bottom
Bake for 30-35 minutes until the top is golden brown and crispy
Remove from oven and let cool for 5 minutes before serving warm
