Cut chicken breast into bite-sized cubes and set aside
Dice bell peppers, broccoli florets, snap peas, and mince garlic and ginger
In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and cornstarch to create the sauce
Heat vegetable oil in a large wok or skillet over high heat until shimmering
Add chicken pieces and stir-fry for 5-7 minutes until golden and cooked through, then remove and set aside
Add remaining oil to the wok, then stir-fry garlic and ginger for 30 seconds until fragrant
Add vegetables and stir-fry for 3-4 minutes until tender-crisp
Return chicken to the wok, pour in sauce, and toss everything together for 2 minutes until sauce thickens and coats all ingredients
Serve over steamed rice with sesame seeds and green onions as garnish
