Heat water and salt in a saucepan over medium heat until it reaches a boil
Add butter and stir until completely melted and combined with the water
Remove from heat and gradually stir in all-purpose flour until a thick dough forms
Transfer dough to a churrera or piping bag fitted with a large star tip
Heat vegetable oil in a deep pan to 375°F (190°C)
Pipe 6-inch long strips of dough directly into the hot oil using scissors to cut, frying 3-4 churros at a time
Fry for 2-3 minutes per side until golden brown and crispy
Remove churros with a slotted spoon and drain on paper towels, then immediately coat with cinnamon sugar mixture while still warm
