Combine flour and salt in a large mixing bowl
Create a well in the center and crack eggs into it, then add half the milk
Whisk together gradually, incorporating flour from the sides, until you have a smooth batter
Add remaining milk and melted butter, stirring until the batter is thin and lump-free
Let batter rest for 30 minutes at room temperature
Heat a non-stick crêpe pan or 8-inch skillet over medium-high heat and lightly butter it
Pour 1/4 cup batter into the center and immediately tilt the pan in all directions to spread thinly and evenly
Cook for about 1-2 minutes until the bottom is light golden, then flip and cook the other side for 30 seconds
Transfer cooked crêpe to a warm plate and repeat with remaining batter
Serve warm, sprinkled generously with caster sugar and optionally a squeeze of fresh lemon juice
