Cut the endive into bite-sized pieces and place in a large salad bowl
Dice the bacon into small pieces and cook in a skillet over medium heat until crispy, about 8 minutes
Remove the cooked bacon with a slotted spoon and set aside on paper towels to drain
Pour off most of the bacon fat, leaving about 2 tablespoons in the skillet
Add the minced shallot to the warm bacon fat and cook for 1 minute until fragrant
