In a mixing bowl, whisk together eggs and sugar until the mixture becomes pale and fluffy, approximately 3-4 minutes
Gently fold in the sifted cake flour and honey, being careful not to deflate the mixture
Heat a non-stick skillet or takoyaki pan over medium-low heat and lightly oil it
Pour the batter into circular molds or use a spoon to create small pancakes, cooking until the bottom is golden brown for about 2-3 minutes
Carefully flip each pancake and cook the other side until golden, approximately 1-2 minutes
Remove the pancakes from heat and let them cool slightly on a wire rack
Once cooled, spread a generous amount of red bean paste on one pancake and sandwich it with another pancake
