Preheat oven to 190°C (375°F) and lightly oil a large baking dish
Heat olive oil in a large pan and sauté diced onions and minced garlic until softened and fragrant, about 3-4 minutes
Add diced tomatoes, tomato paste, and cook for 5 minutes to develop flavors, then season with oregano, thyme, salt and pepper
Spread half of the tomato mixture on the bottom of the prepared baking dish
Place fish fillets on top of the sauce and season with salt, pepper, and a squeeze of lemon juice
Cover fish with remaining tomato sauce and sprinkle with fresh parsley and dill
Cover baking dish with foil and bake for 20-25 minutes until fish flakes easily with a fork
Remove foil, drizzle with extra virgin olive oil, and serve hot with crusty bread
