Slice 1.5 kg of yellow onions thinly and evenly
Heat 40 ml of butter and 20 ml of olive oil in a large pot over medium heat
Add onions and cook for 35-40 minutes, stirring occasionally, until deeply golden brown and caramelized
Sprinkle 15 grams of all-purpose flour over the onions and stir well to coat
Pour in 1 liter of beef broth and 250 ml of dry white wine, add 2 bay leaves and season with salt and pepper
Simmer for 15-20 minutes to develop flavors
Ladle soup into oven-safe bowls, top each with a slice of toasted baguette and 50 grams of grated Gruyère cheese
