Cut the halloumi or feta cheese into thick slices of approximately 1 cm thickness
Set up three shallow bowls: one with flour, one with beaten eggs mixed with a pinch of salt and pepper, and one with breadcrumbs mixed with dried oregano
Dredge each cheese slice first in flour, shaking off excess, then dip in the egg mixture, and finally coat thoroughly with the breadcrumb mixture
Heat olive oil in a large skillet over medium-high heat until it reaches approximately 170°C or until a small piece of bread turns golden in about 30 seconds
Carefully place the breaded cheese slices into the hot oil, frying for 1-2 minutes per side until golden brown and crispy
Remove the fried cheese with a slotted spoon and drain on paper towels
Serve immediately while still hot, garnished with fresh lemon wedges and chopped fresh mint or parsley
