This irresistible Greek starter features thick slabs of feta coated in a crispy golden crust of breadcrumbs and sesame seeds, then fried to perfection in olive oil. The contrast between the crunchy sesame exterior and the warm, creamy, tangy feta inside is absolutely addictive. It is traditionally drizzled with Greek honey and a squeeze of lemon juice, creating a wonderful sweet-salty combination. Served as a meze, it disappears from the table in minutes.

Cut the feta into thick slices about 1.5 cm thick. Pat dry with paper towels.
Set up a breading station: flour in one shallow bowl, beaten eggs in another, and breadcrumbs mixed with sesame seeds in a third.
Dust each feta slice in flour, dip in egg, then press firmly into the sesame breadcrumb mixture to coat all sides.
Heat olive oil in a frying pan over medium-high heat until shimmering.
Fry the feta slices for 2-3 minutes per side until deeply golden and crisp. Work in batches to avoid crowding.
Drain briefly on paper towels, then transfer to a serving plate.
Drizzle with honey and a squeeze of lemon juice. Serve immediately while still warm and crispy.
