Add the drained beans, vegetable broth, dried oregano, bay leaf, salt and pepper to the pot
Bring the mixture to a gentle boil, then reduce heat and simmer for 40-50 minutes until beans are tender
Stir occasionally and adjust seasoning as needed
Remove from heat, discard bay leaf, and serve warm garnished with fresh parsley and a drizzle of olive oil
