Heat the grill or grill pan to high temperature until very hot, approximately 10 minutes
Brush steaks lightly with olive oil and place on the hot grill, searing for 4-5 minutes per side for medium-rare, adjusting time based on thickness and desired doneness
Cut potatoes into thin fries, soak in cold water for 30 minutes to remove excess starch
Pat fries dry and fry in olive oil at 160°C for 10 minutes until golden, drain on paper towels and season with salt
Remove steaks from grill and let rest for 5 minutes before serving
Finish steaks with fresh thyme, rosemary, and a knob of butter if desired
