Preheat oven to 200°C and line a baking sheet with parchment paper
In a saucepan, combine water, butter, salt and sugar over medium heat until butter melts and mixture comes to a boil
Remove from heat and stir in flour until a thick paste forms, then let cool for 2 minutes
Beat in eggs one at a time, mixing thoroughly until the choux pastry is smooth and glossy
Transfer pastry to a piping bag with a round tip and pipe small puffs onto the prepared baking sheet, spacing them 5cm apart
Bake for 18-20 minutes until golden brown and puffed, then transfer to a wire rack to cool slightly
Warm honey in a small saucepan and drizzle generously over the warm puffs
Sprinkle with crushed pistachios and walnuts, then dust with ground cinnamon and serve immediately
