Soak 1 cup urad dal (split black lentils) and 2 cups parboiled rice separately in water for at least 4 hours or overnight
Grind the soaked urad dal with minimal water until it reaches a light, fluffy batter consistency, then grind the rice separately until slightly coarse
Mix both batters together, add salt to taste, and let it ferment in a warm place for 8-12 hours until it doubles in volume
Pour the fermented batter into greased idli molds, filling three-quarters full, and steam in an idli cooker for 8-10 minutes until a toothpick comes out clean
For sambar, dry roast 2 teaspoons sambar powder and cook 1 cup toor dal until soft, then set aside
Heat 2 tablespoons oil, add mustard seeds, curry leaves, dried red chilies, and asafoetida, then add diced vegetables like carrots, beans, and radish
Add the cooked dal, sambar powder, tamarind paste, and water to create a medium-thick curry consistency, simmer for 5-7 minutes
Adjust seasoning with salt and tamarind, serve hot sambar with warm idli and coconut or tomato chutney
