Preheat your oven to 350°F (175°C) and lightly butter a 9x13 inch baking dish
Finely chop the walnuts and pistachios, then mix them together with cinnamon and sugar in a bowl
Gently separate the kataifi strands and divide them into two equal portions
Spread the first half of the kataifi strands in the prepared baking dish, pressing down gently
Distribute the nut mixture evenly over the kataifi layer, leaving 1/2 inch margin from edges
Cover with the remaining kataifi strands and press down lightly, then drizzle melted butter evenly over the top
Cut the pastry into diamond or square shapes using a sharp knife, cutting through all layers
Bake for 35-40 minutes until golden brown and crispy, then remove from oven
While baking, combine water, sugar, honey, and cinnamon stick in a saucepan, bring to boil and simmer for 5 minutes
Pour the hot syrup immediately over the hot kataifi, allowing it to soak in completely, then let cool before serving
