Preheat oven to 200°C and line a baking sheet with parchment paper
Pat chicken breasts dry with paper towels and season generously with salt and pepper on both sides
In a small bowl, combine minced garlic, lemon zest, chopped fresh rosemary, thyme, oregano, and olive oil to create a paste
Rub the herb mixture evenly over all sides of the chicken breasts
Arrange chicken on the prepared baking sheet and surround with halved lemon slices and cherry tomatoes
Roast for 25-30 minutes until chicken reaches an internal temperature of 75°C and is golden brown
Remove from oven and let rest for 5 minutes before serving
Drizzle with pan juices and garnish with fresh parsley and lemon wedges
