Clean the mussels thoroughly under cold running water, removing any beards and discarding any that are cracked or open
Pat the mussels dry with paper towels and season generously with salt and pepper
Cut the saganaki cheese into thick slices and dredge each mussel shell lightly in flour, then attach a slice of cheese to the top using a small toothpick
Heat 60ml of olive oil in a large pan over medium-high heat until shimmering
In batches, place the cheese-topped mussels cheese-side down in the hot oil and fry for 2-3 minutes until the cheese is golden and crispy, then carefully flip and cook the mussel side for 1 minute
Transfer the cooked mussels to a serving platter and keep warm
In the same pan, add diced tomatoes, white wine, garlic, oregano, and fresh parsley, simmering for 5 minutes until the sauce reduces slightly
Pour the warm tomato wine sauce over the mussels and serve immediately with lemon wedges and crusty bread
