Preheat oven to 200°C (400°F) and line baking sheets with parchment paper
Roll out thawed puff pastry sheets on a lightly floured surface to about 3mm thickness
Brush pastry generously with melted butter, leaving a small border on all edges
Sprinkle sugar, ground cinnamon, and raisins evenly across the buttered surface, pressing gently
Starting from one long edge, tightly roll the pastry into a log, then cut into 12 equal spirals
Place spirals cut-side up on prepared baking sheets, spacing them 5cm apart
Brush tops with egg wash and bake for 18-22 minutes until golden brown and puffed
Remove from oven and cool on wire racks for 5 minutes before serving warm
