Mix whole wheat flour with salt and knead with warm water to form a soft dough, let it rest for 20 minutes
Divide dough into 4 equal portions and roll each into a thin circle
Spread ghee on the dough circle and sprinkle shredded cheese, chopped green chilies, and coriander leaves on half of it
Fold the dough in half to create a semi-circle, then fold again to form a triangle, sealing the filling inside
Gently roll the triangle to flatten it slightly without breaking the seal
Heat a cast iron skillet or tawa on medium-high heat and place the paratha on it
Cook for 2-3 minutes until light brown spots appear, then flip and spread ghee on the cooked side
Cook the other side for 2-3 minutes until golden and crispy, pressing gently with a spatula to ensure even cooking
Transfer to a plate and serve hot with yogurt, pickle, or fresh salad
