Place one flour tortilla on the hot skillet and let it warm for about 30 seconds
Sprinkle a generous handful of shredded Oaxaca cheese on one half of the tortilla
Add the diced onion and fresh cilantro on top of the cheese
Fold the tortilla in half to create a semi-circle and cook for 2-3 minutes until golden and crispy
Carefully flip the quesadilla and cook the other side for another 2-3 minutes until the cheese is completely melted
