    Rinse quinoa under cold water and cook in a pot with 2 cups water for 15 minutes until fluffy and water is absorbed

    Drain and rinse canned black beans, then warm them in a small pot with cumin and garlic powder for 5 minutes

    Dice the red bell pepper, red onion, and cucumber into bite-sized pieces

    Combine fresh cilantro, lime juice, olive oil, salt and pepper in a bowl to make the dressing

    Warm corn kernels in a skillet for 2 minutes until lightly charred

    Divide cooked quinoa among four bowls and arrange black beans, vegetables, and corn on top
