Clean and scale the sea bream fish, removing the guts and gills. Pat dry with paper towels
Place the fish on a cutting board and season the inside and outside generously with sea salt, black pepper, and dried oregano
Stuff the cavity of each fish with lemon slices, fresh thyme sprigs, and minced garlic cloves
Brush the outside of the fish with extra virgin olive oil on both sides
Heat the grill to medium-high heat and lightly oil the grates to prevent sticking
Place the fish on the hot grill and cook for 8-10 minutes on each side until the flesh is opaque and flakes easily with a fork
Transfer the grilled sea bream to a serving platter and drizzle with fresh lemon juice and remaining olive oil
Serve immediately with roasted potatoes, grilled vegetables, and a fresh Greek salad
