Heat the tahini in a large mixing bowl over a double boiler, stirring occasionally until it becomes warm and slightly more fluid, about 3-4 minutes
Gently warm the honey in a separate small saucepan over low heat until it becomes pourable, approximately 2 minutes
Pour the warm honey into the tahini while stirring continuously with a wooden spoon to combine thoroughly
Add the chopped walnuts and pistachios to the mixture, folding them in gently until evenly distributed
Continue stirring the mixture for 5-7 minutes until it becomes thick, glossy, and begins to pull away from the sides of the bowl
Transfer the halva to a parchment-lined baking dish or mold and smooth the surface with a spatula
Allow the halva to cool and set at room temperature for 30 minutes, then refrigerate for at least 2 hours before slicing
Cut into squares or diamonds using an oiled knife and serve at room temperature with fresh fruit or yogurt
