In a bowl, combine finely chopped walnuts, almonds, and pistachios with ground cinnamon and sugar, mixing well
Lay out phyllo sheets and cut them into strips about 2 inches wide
Brush each phyllo strip with melted butter on both sides and layer them in the baking dish, creating a base
Sprinkle half of the nut mixture evenly over the phyllo base
Layer more buttered phyllo strips on top, then add remaining nut mixture, and finish with final layer of buttered phyllo
Bake for 25-30 minutes until golden brown and crispy
While baking, prepare honey syrup by heating honey with water and cinnamon, then drizzle over hot pastry immediately after removing from oven
