Instructions

    Heat 2 tablespoons of vegetable oil in a large wok or skillet over high heat until shimmering

    Add minced garlic and ginger, stir-fry for 30 seconds until fragrant

    Add shrimp and cook for 2-3 minutes per side until pink and cooked through, then remove and set aside

    In the same wok, add remaining oil and stir-fry diced onions, carrots, and peas for 2 minutes

    Add the cooked rice, breaking up any clumps, and stir-fry for 3-4 minutes until heated through

    Pour in soy sauce, sesame oil, and white pepper, mixing well to coat all rice evenly

    Return shrimp to the wok, add sliced green onions, and toss everything together for 1 minute

    Serve immediately while hot, garnished with sesame seeds if desired
