Heat 2 tablespoons of oil in a skillet over medium-high heat and cook the chorizo by breaking it into small pieces and stirring frequently until browned and cooked through, about 8 minutes
Form the masa dough into 8 oval balls, then flatten slightly and use your thumb to create a rim around the edge
Heat more oil in the skillet and carefully place each sope into the hot oil, frying for 2-3 minutes per side until golden and crispy
Drain the fried sopes on paper towels and set aside
Warm the refried beans in a separate pan and spread a generous layer onto each sope
