Thaw frozen spinach if using, then squeeze out excess moisture thoroughly using a clean kitchen towel
Heat 2 tablespoons of olive oil in a large skillet over medium heat, add diced onions and cook until softened
Add fresh spinach to the pan and cook for 3-4 minutes until wilted, then remove from heat and let cool slightly
In a bowl, combine cooked spinach mixture with crumbled feta cheese, ricotta, eggs, salt, pepper, and nutmeg
Layer phyllo sheets in the baking pan, brushing each sheet with olive oil and allowing edges to hang over the pan
Spread spinach and cheese filling evenly over the phyllo base, then fold overhanging edges over the filling
Top with 4-5 more phyllo sheets, brushing each with olive oil, and tuck edges into the pan
