Toast the bread cubes in a preheated oven at 180°C for 8-10 minutes until golden and crispy
Dice the tomatoes, cucumbers, and red onion into small pieces
Mix the diced vegetables with fresh parsley, basil, and oregano in a large bowl
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt and pepper
Add the toasted bread cubes to the vegetables and pour the vinaigrette over
Toss gently to combine and let sit for 5 minutes before serving
Crumble feta cheese on top and serve at room temperature
