Instructions

    While bulgur is soaking, finely chop the fresh parsley, mint, tomatoes, cucumber, and red onion into small pieces

    In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, salt, and pepper to create the dressing

    Once bulgur is cooked and cooled, fluff it with a fork and combine with the chopped vegetables
