Tapioca com queijo is a beloved Brazilian breakfast dish made with tapioca starch filled with melted cheese and sometimes meat. It's a crispy, warm crepe-like preparation that's quick to make and deeply satisfying. The tapioca creates a unique texture that's neither bread nor crepe, with a slightly chewy interior and crisp exterior when cooked properly.

Combine tapioca starch with salt in a medium bowl and mix well
Heat a non-stick skillet or tapioca pan over medium-high heat
Sprinkle a thin, even layer of tapioca starch mixture onto the hot skillet, about 2-3 mm thick, covering the entire surface
Let it cook for 1-2 minutes until the bottom begins to turn golden and slightly crispy
Add shredded cheese and diced ham or calabresa to one half of the tapioca circle
Wait for the top layer to become translucent and slightly set, then fold the tapioca in half
Cook for another 30-45 seconds until the cheese melts and the tapioca turns light golden brown
Transfer to a serving plate and serve immediately while warm
