Thaw the puff pastry sheets according to package instructions, typically 30-40 minutes at room temperature
Preheat your oven to 200°C and line baking sheets with parchment paper
Roll out puff pastry sheets and cut into rectangular pieces approximately 10x5 cm, then place on prepared baking sheets
Bake for 15-18 minutes until golden brown and crispy, then remove and cool completely on a wire rack
While pastry cools, prepare pastry cream by whisking egg yolks with sugar until pale, then fold in whipped heavy cream and vanilla extract
Once pastry layers are cooled, spread a thin layer of pastry cream on the bottom piece of pastry
