Heat ghee in a large pan over medium heat and add mustard seeds, cumin seeds, and dried red chilies, allowing them to splutter and release their aromas
Add the finely chopped onions and sauté until they turn golden brown, approximately 2-3 minutes
Stir in the green chili, ginger, carrot, and peas, cooking for another 2 minutes until the vegetables begin to soften
Pour the roasted semolina into the pan and stir continuously for 2-3 minutes, coating all particles evenly with ghee
Gradually add the hot water or vegetable broth while stirring constantly to avoid lumps and ensure even hydration
Reduce heat to low, cover the pan, and simmer for 5-7 minutes until the semolina absorbs all the liquid and becomes fluffy
Remove from heat, add salt and black pepper to taste, then fluff gently with a fork
Garnish with fresh coriander leaves and serve hot with a squeeze of lemon juice
