Soak rice and urad dal separately in water for 4-6 hours, then grind them together with salt and water to make a smooth batter
Allow the batter to ferment overnight or for at least 8 hours until it becomes fluffy and doubles in volume
Chop onions, tomatoes, green chilies, and coriander leaves finely and set aside
Heat a non-stick griddle or tawa over medium heat and lightly grease it with oil
Pour a ladle of batter onto the center of the griddle and gently spread it into a thick round pancake using the back of the ladle
Sprinkle the chopped vegetables and spices on top of the batter
Drizzle a little oil around the edges and cook until the bottom becomes golden brown and crispy, about 3-4 minutes
Flip carefully and cook the other side until golden, then transfer to a plate and serve hot with chutney or sambar
