Grate the seeded cucumber using a box grater and place it in a fine-mesh strainer over a bowl
Press the grated cucumber gently with the back of a spoon to extract excess liquid, allowing it to drain for 5 minutes
Mince the garlic cloves finely and combine with the drained cucumber in a mixing bowl
Add the Greek yogurt, fresh dill, fresh mint, lemon juice, and olive oil to the cucumber mixture
Stir all ingredients together until well combined and smooth
Season with sea salt and freshly ground black pepper to taste
